In 2009 local Dallas resident and former private chef for Steve Harvey was awarded the first contract of its kind with the US Department of Defense. Chef Tonne’s mission: to provide the first organic, comfort food to the men and women of Bolling AFB, DC (http://www.dcmilitary.com/stories/010710/aviator_28223.shtml). The mission was completed with success and Chef Tonne returned home to Dallas after launching the concept to the US Air force.
This private chef will now conquer the Southern Dallas Corridor, with Classic Cup Café-opening February 25, 2012. This café will be located in Historic Downtown Lancaster, a stone’s throw from where the eggs, will be raised by country music star Janie Fricke (http://www.janiefricke.com/). The goat cheese will arrive from Lancaster, the chickens will walk from Waco, and the beef from central Texas, as well as food from the local coop Urban Acres (http://urbanacres.wordpress.com) will determine the chef’s specials.
Constantine’s bakery (http://www.constantinsbakery.com) will be the bread supplier with kosher parve breads high in Omega-3 and lower in sodium far above what the USDA requires. Classic Cup Cafe will make chicken and beef sausage in-house with casing that are vegetarian based, made from humanely slaughtered animals, free range, no antibiotics, or GMO. Classic Cup Cafe will not use styrofoam, the carry out containers are a plant based recyclable material.
Classic Cup Cafe will offer retail items from local farmers, a personal chef club, catering on site private parties, hosting meetings. Classic Cup will be open late on Thursday nights for $2.00 bottomless coffee from a local roaster, to help with those study groups, weekly meetings or just for conversation about your upcoming weekend. Classic Cup Cafe will offer gourmet coffee, lattes, cappuccinos, Italian sodas, and smoothies. Classic Cup Cafe is always looking for small businesses who offer goods to this overlooked, underappreciated part of Dallas County.
Classic Cup motto: “We are TEXAS, fresh produce and meats should be a right, not a privileged!”
